Nutty pumpkin chai spiced cinnamon buns

Nutty pumpkin chai spiced cinnamon buns!

I always cook or bake for everyone around me, but have been craving cinnamon buns for myself lately. My round Pyrex® cake dish was calling my name for this! The Great British Bake Off this week with their pastries really inspired me, and with the leaves turning colour and falling, pumpkins dotted around the house and on every windowsill, this seemed like the perfect bake. You can get your Pyrex® cake dish from Harts of Stur!

Buns-
2 ½ cups self-raising flour
½ tsp masala spice
2 tsp cinnamon
125g butter, melted
2 egg yolks
2 tbsp milled nuts & flax (optional)

Filling - mix altogether to form filling
2 tsp chai spice mix
½ tsp cinnamon
5 tbsp pumpkin puree
½ cup dark brown sugar
1 tsp melted butter

Icing - mix all together to form icing
80g icing sugar
1 ½ chai spice
1 tsp pumpkin puree
100g cream cheese
1 tbsp melted butter

Preheat the oven to 180C fan. Mix all the dry bun ingredients together in one bowl and mix the wet together in another. Combine together, forming a thick dough and place onto a well-floured surface. Roll out until about a 3cm thick rectangle forms. Lather your mixed filling generously across the rolled out dough. And roll from the shorter end until you’ve made a log. Slice the log into 8 evenly sized swirls and place into your Pyrex® cake dish. Pop into the oven for 37 minutes until you can poke a knife through smoothly. Remove from the oven and leave to cool for a few minutes. Take your icing and generously lather on top of your buns. Serve warm straightaway!
