Ingredients:
2 small red onions, chopped
1 large garlic, chopped
2 stuck celery heart, chopped
2 tins plum tomato
Salt & pepper to taste
1 round medium sized bread, center removed into bowl shape
Dash of olive oil

In a pan on medium heat, fry your onions with a light splash of olive oil until clear and add in your garlic. Fry for about 2 minutes then add in your chopped celery. Cook for about 5 minutes until softening and add a dash of water to prevent burning. Once celery has gone clearer and softened, pour entire mix, including oil into a blender (I use my Shark Ninja self cleaning blender ā€” life saving) and blitz with tinned plum tomatoes, salt and pepper. If you like, you can add in a handful of basil, too. If not still retaining heat, pour back into your pan and heat gently before pouring into your bread bowl to serve. Top with croutons or herbs and serve with the inside of the bread bowl on the side! Sometimes I add in a roasted bell pepper or a little cream to change the consistency but find that when seasoned well with some salt and pepper, this super simple soup is the perfect hearty and warming meal. Josh likes his with a side of grilled cheese (cheese toastie)!

Something I always make when Iā€™m feeling homesick is soup. Although Ben and Jerry or a cuppa and some chocolates definitely are helpful, somehow a warm bowl of soup and crusty bread really warm my soup, and help me feel better. I had a big bowl of soup tonight and a chicken sandwich on the side while I FaceTimed my dad and brother and now am about to break out the chocolate, light some candles and get a rom-com on the TV!
