Roasted thyme carrot coins with extra virgin olive oil and sea salt 🥕

After being away for a few very busy days, which were so much fun, I am so excited to be home tonight, get into my comfies and just relax! We super cleaned the house before we left, and I arranged my new autumnal dried bouquet, so candles lit, Sam & Billie The Mummy Diaries on and something a little more homely — roasted veg is 100% on the menu this weekend!

Ingredients:
3-4 organic carrots, sliced into coins
1 tsp salt
Handful of fresh thyme (dried works, too!
2 tbsp extra virgin olive oil

Preheat the oven to 200c fan. In a bowl, toss your carrot coins in olive oil and salt, and one spring of thyme (leaves only). Lay coins flat in single layer on a baking tray and pop in the oven for about 25 minutes or until softened and starting to turn golden. Enjoy hot on the side of almost any meal, I like mine with a roast chicken breast and some mashed potatoes or roasted broccoli and a drizzle of gravy!
