Creamy Caesar salad with lemon pepper grilled chicken and homemade croutons!

There’s one salad that I can always get behind, and that’s a chicken caesar. No matter the season, day of the week or mood I’m in - you say chicken and I’ll say Caesar salad. I recently shared my homemade crouton recipe, so be sure to check those out, but ⭐️save this⭐️ if you want my secret tip for hacking the easiest, veg-and-protein packed Caesar salad with lovely big Parmesan shavings!

Ingredients: (serves 2)
2 chicken breasts
1 whole lemon
2 cups kale, packed & leaves only
⅓ head cos lettuce, chopped
¼ cup parmesan cheese, grated in large slices (hack below)
⅓ cup your favourite Caesar salad dressing (or make your own)
½ red onion, sliced
1-2 tbsp pepper
2 large pinches of salt
1-2 drizzles olive oil
+ anchovies (optional)

About 10-15 mins before grilling your chicken (I use my George Foreman / ad pr product - but you can use a frying pan on medium to high heat, too), season your chicken breasts with a drizzle or two of olive oil, juice of half your lemon, salt & pepper. Make sure it’s all covered and leave to the side while you heat up your grill. In the meantime, take your kale leaves and pop them in a bowl. Squeeze just about the rest of the lemon (juice) onto the kale and massage it well. This helps to break down the leaves so that they are softer to eat and the acidity helps to cut the bitterness. Grill your chicken in your heated grill or pan for about 3-4 minutes on each side or until golden brown on the outside and juicy and no longer pink on the inside. Assemble your bowls by adding in your kale, lettuce, red onion, chicken, croutons and then just drizzle your dressing across the top!


Now for the ⭐️top tip⭐️ for getting those gorgeous wide and long parmesan gratings: Use your veg peeler!! Start on the long side of the cheese, not the end, and go lengthways away from you. You can always break your cheese up afterward, but I love the big, salty pieces of cheese! You can add any remaining lemon as slices on the side, and pop any extra croutons in a bowl as you know you’ll want more.
