Veggie tray bake

I’m sharing my no recipe recipe to success with a tray bake, and my top tip is to either make sure there’s enough liquid for the onions and mushrooms not to burn (aka olive oil) or add them in later in the process and mix often!

Ingredients:
6 white mushrooms, cubed
2 carrots, sliced
2 bell peppers, cubed
1 handful cherry tomatoes
1 large red onion, sliced
Few sprigs of fresh oregano
1 tsp dried Italian herbs
1 tsp garlic powder
3-4 tbsp olive oil

Add everything into a roasting tray and mix together until seasoning and olive oil have coated everything thoroughly. Roast for approximately 45 minutes, stirring every 15-20 minutes to make sure the onions don’t burn. To make crispier, pop in for around an hour!

We are having this veggie tray bake with mashed potatoes, gravy, Yorkshire puddings and chicken tonight! I’m so excited.
