Easy 15-minute dinner that’s 100% vegan! 🌱

Yes, you read that right! With @aldiuk’s plant-based range, it’s super easy to swap out meat for a veggie alternative when cooking. In this recipe, I usually would make spiced lamb meatballs, so I’ve used curried sweet potato balls instead. I’m usually cooking for both Josh and I after work, so to have an easy and inexpensive recipe that takes next to no time is amazing, meaning we can be done with our yummy dinner in time to jump on the sofa in time for Love Island 🤗❤️ Everyone in Love Island is falling in love with each other, and I’m over here falling in love with a plate of food!

All you need is @aldiuk curried sweet potato balls, couscous, veggie stock cube, a large vine tomato sliced in half, red pepper hummus (or any hummus of your choice), chopped parsley and olive oil.


Start by heating up a pan on medium heat with a little drizzle of olive oil and add in your sweet potato balls (as many as you like). Keep an eye on them until they are cooked after about 15 mins. You may want to give the pan a wiggle every so often so they are cooked on all sides. While your sweet potato balls cook, place your tomato halves face down in another pan with a drizzle of olive oil. After a few minutes, pour a tablespoon of water over and cover the pan to cook on a low heat until the meatballs are ready. Crush the veggie stock cube into bowl and pour in a cup of couscous. Boil a cup of water in your kettle and pour over the crushed veggie stock cube and couscous. Stir the couscous, veggie stock cube and boiling water mixture and then cover the couscous bowl with a tea towel. Leave until all water is absorbed and the couscous is fluffy (around 5 mins). After your sweet potato balls are ready, all the other food will be ready to plate. Spoon your couscous onto your plate, spoon a scoop of hummus, add your tomato halves (which should be blistered and soft), and top with your sweet potato balls! Drizzle your chopped parsley and you’re ready to dive straight in and enjoy! 💫
