Smoked salmon, jammy egg and barley breakfast bowl with smashed avocado dressing!

I started making this salad a few years ago after a local cafe discontinued the breakfast bowl that I loved. I use Purely Organic Eggs in this because they are perfect every time I cook them, and because I know that the eggs are coming from a farm that even exceeds the standards of free range meaning not only are the hens living in better conditions but so is the wildlife around them.

Ingredients: (serves 1-2)
1 Purely Organic Eggs egg (soft to medium boiled)
125g barley (+375ml water)
100g smoked salmon
1 handful lambs lettuce
5g (or small handful) fresh dill
1 tbsp chives, chopped
9 cherry tomatoes, sliced in half
+ salt, olive oil & pepper

Dressing: ½ tsp dijon, ½ avocado, ½ lemon juice, 25ml white wine vinegar and 5 tbsp evoo whisk together until completely combined or just serve with smashed avo and a squeeze of lemon.

Cook your barley by bringing it to a boil with 375ml water, and then lowering to a simmer for about 25mins. Cook your egg perfectly jammy by bringing a small pot of water to boil on the stove, then add in your egg and cook for 7 minutes. After the egg is ready, pop into an ice bath for 5 mins and then peel. Toss cherry tomatoes with a pinch of salt, pepper and olive oil for a minute or two before serving. Assemble your bowl and with barley, smoked salmon, lambs lettuce, cherry tomatoes, dill and chives. Top with your perfect egg and a drizzle of olive oil over your lettuce. Scoop the dressing or smashed avo in and enjoy!
