Pesto chicken & butternut squash skewers

Quick and easy grilling is top of my list now that the rainy, cold weather has started making it’s way over to me in London. Combining sweet butternut squash with one of my favourite sauces, PESTO, and succulent, juicy chicken, all grilled in about 4 minutes on the George Foreman Flexe Grill!

Ingredients:
325 g butternut squash, cubed (pre-peeled from supermarket)
400g chicken breast, cubed
1 tbsp pesto of choice
1 tbsp oil (or oil spray) for brushing
1 tsp garlic granules
3 tbsp creme fraiche + 1 tsp pesto (for dipping)

Boil the butternut squash cubes for 7 min, then drain and rise to cool slightly. Marinate the chicken while the squash cooks in 1 tbsp pesto + 1 tsp garlic granules. Skewer squash and chicken, and grill for 4-6 min until chicken is fully cooked through. Serve with any sides you choose, and a pesto + creme fraiche dip which is just a swirl of pesto through a few tbsp of creme fraiche. So easy!
