Orzo greek salad

The easiest filling salad: orzo greek salad! 🥗

Safe to say I am totally obsessed with orzo at the moment and practically eating it every chance I can. It feels like the quintessential pasta of summertime. And it’s perfect for making into a salad that you can keep in the fridge and have with any meal!

Ingredients:
1/2 cup orzo (uncooked)
â…“ cucumber, cut into quarters
1 handful cherry or plum toms, halved
3 tbsp dill chopped
1 tbsp capers
1 tbsp oregano chopped
1 tbsp olive oil
1 small white onion chop (â…“ cup)
season

Cook orzo as directed on package. Drain & run under tap water or leave to cool with a little olive oil stirred in. Once cooler, mix with the rest of the ingredients and serve!

I actually love this salad once it’s been in the fridge overnight as the onions mellow out and all the flavours from the herbs really shine. Enjoy!
