Succulent lamb, goat cheese, green olive, couscous and swiss chard salad!

This well rounded salad is ready in under 15 minutes & filled to the brim with gorgeous flavours! I used lamb noisettes, which sounds fancy, but trust me, are so juicy and easy to cook.

Ingredients:
6-8 lamb noisettes
100g wholegrain mustard
100g green olives (I’ve used these Nocerella ones)
100g soft goat cheese without a rind
4 handfuls of swiss chard
1 cup couscous
+ olive oil, salt and pepper

Preheat your oven to 200c fan and pop a baking tray in that you’ll use. Bring your noisettes to room temperature and season with a pinch of salt, olive oil and then generously rub your mustard onto them on both sides. Heat a frying pan with a drizzle of olive oil and brown on both sides. Some of the mustard will come off but don’t worry. After browning, transfer onto your baking tray and pop in the oven for about 7-9mins (depending on how you like your lamb cooked). Pop your couscous in a pot on the stove and cook as directed on the packet. Slice your olives (and de-pip them if necessary) and wash your chard. Once the lamb is done in the oven, leave to rest for 3-5 minutes. You can either serve whole or slice up like I have. Then pop everything onto your plate, add some big chunks of goat cheese, drizzle with olive oil and add some fresh ground pepper!

This recipe serves 2-4 and leftovers are just as delicious the next day!
