Homemade coconut maple oat bars

Ingredients:
2 packs ZENB Bites (I used the Carrot, Pineapple and Coriander Veggie Bites)
1 ZENB Carrot Veggie Stick
1½ - 2 cups jumbo oats
70g coconut sugar (adjust based on sweetness preference)
3 heaped tsp coconut oil
100ml maple syrup

Preheat your oven to 170c fan. Chop your ZENB Veggie Bites and Veggie Stick finely, until crumbly. Spread your oats on a baking tray with 20g coconut sugar and toast in the oven until lightly toasted (about 15mins). Put your toasted oats and crumbled ZENB in a large bowl. In a pot on the stove on a low heat, combine the rest of your coconut sugar, maple syrup and coconut oil and melt and stir until sugar is dissolved. Pour over your oat/ZENB mixture and stir until completely coated and combined. Line an 8x8 inch pan with parchment paper and spoon your ZENB oat mix into the tin. Press down firmly as much as possible (this ensures that it stays together as best as possible) and pop in the fridge for a couple of hours or until completely hard and cold. Lift out of your tin and carefully cut your bars. They may be a bit crumbly but should stay together for the most part! So yummy, eat right away or pop in a bowl of yogurt with some fresh berries!
