Do you ever find a recipe on Instagram or online and think, gonna make that? ✨

Well I basically did here, found a beautiful baked egg breakfast recipe, replicated every single step very thoroughly making sure everything was egggggs-actly as it said, and guess what? I overlooked the darned eggs! 🤦🏼‍♀️

Either way, eggs are eggs (as long as they aren’t undercooked... eek runny egg white, no thank you) but next time, I’m going to have to get less distracted and check those eggs a little more frequently 🙈💥

Super simple if you want to try, just need:
🌮Small tortillas⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍳Eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥑Avocado ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍅Tomatoes (my fav eee!) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥫Refried beans (I used regular black beans and they were a bit overdone, too, as the oven takes the moisture out of them) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍴...and some olive oil! Ooh and onion slices if you like!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Lightly brush the tortillas with olive oil and put in the oven to turn golden (oven at 185 degree), make little flat piles of refried beans on top of the golden tortillas and stick in the oven again to hat them up. - The fun step: take everything out of the oven, and using a spoon, make a hole in the middle of the beans and crack your eggs into them. Make sure they are wide enough to hold the whole egg, but some spill over is totes fine. - Bake in the oven for about 8 mins, check repeatedly and if not cooked after 8 mins, keep going but check like every minute! - Chop tomatoes, slice avocado, onion, too, and then once eggs are set, decorate with your lovely cut up veg & serve! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
