The easiest potato salad

The easiest potato salad you will ever make, with my favourite a medium boiled egg to either mash in, or just have on the side.

Ingredients:
20-25 new potatoes
1/4 cup finely chopped chives
3 heaping tbsp mayo
1 pinch of salt and pepper
1 & ½ tbsp white wine vinegar
1 & ½ tbsp olive oil
1 (or more) boiled egg

Boil potatoes for approx. 16 minutes until fully cooked, soft but still holding form when sliced. Once drained, run under cold tap to cool, or let sit until no longer steaming. Slice each potato in half and mix in mayo, salt, pepper, white wine vinegar and olive oil in a bowl. Serve with chopped chives mixed in or sprinkled generously on top and your egg either chopped mixed in or on the side.

I don’t know about you, but I’m all over picnic food, carbs and chocolate lately, this weird summer weather that just won’t decide has me trying to decide between iced teas or hot cocoa. This is cozy, filling, can be made while the potatoes are still warm, and eaten cold after refrigerating the next day so it’s perfect for this confusing English weather. This was made using my gorgeous @veg2tablelondon new potatoes and chives, paired with our refrigerator staple for Josh that is @hellmansuk mayo. 🥔
