Crispy Vegan Chickpea Tenders!

The most delicious homemade vegan fast-food that is veg-packed, crispy on the outside and the most lovely texture on the inside. Literally so good!!

Ingredients: (makes ~15)
1 yellow onion
1 tin chickpeas, drained, keeping liquid (I used Suma Whole Foods)
1 large tbsp garlic powder
2 cups crushed cornflakes
400g plain flour
Vegetable oil for frying
1 pinch black pepper

In a food processor/chopper, blitz your onion. Then add in your chickpeas and garlic powder. Whizz altogether. Whisk your aquafaba (chickpea liquid) until slightly foamy. Pour into food processor and blend until combined. This should create a dip-like texture. Spoonful by spoonful, add in your flour and continue to blend. It should start to thicken and form a doughier texture. The texture will still be sticky to touch. Using a spoon or scoop, spoon 1 heaped tbsp of the dough into your crushed cornflakes and cover until completely covered. Place on a sheet of baking paper and repeat until you have about 15. Shape them into tenders and then generously touch up any areas that need more crushed cornflakes. Add your oil into a deep pot and once you can drop in a cornflake and the oil bubbles around it, you can add in your tenders using a spatula. Add 3 in at a time and fry until golden brown on both sides (about 1-2 mins each side). Remember to lift them out using tongs, and place them on a paper towel to absorb excess oil - don’t burn yourself! Serve up with a sprinkling of black pepper, squeeze of lemon and a big dollop of ketchup and mayo!

We had these on their own, and then today I had a chickpea tender wrap with vegan caesar dressing, shredded cos lettuce and diced cherry tomatoes! The cornflakes I used are gluten free so you can easily just use GF flour and make the whole thing gluten free, too!
