Creamy burrata with grilled Roquito peppers and crunchy baguette - sweet and spicy 🌶

Ingredients:
1 cup Roquito pearl peppers (Mine are from @leathams_ltd )
2 balls of burrata, insides scooped out
1 tsp cracked pepper
1 pinch salt
1 pinch dried parsley
2 tbsp olive oil
1 crunchy sourdough baguette

Grill your Roquito peppers with ½ tbsp olive oil in a pan on a medium to high heat until slightly charred and wilted. Pour onto your sharing plate and spoon the inside of the burrata on top. Sprinkle your pepper, salt and parsley and drizzle your olive oil. Leave to sit for at least 5 minutes and then serve with crunchy baguette. Leaving them to sit allows all the flavours to mix and created a delicous sweet flavour to mop up with the bread at the bottom of the plate!

I haven’t had my burrata fix in a little while and was feeling like it was overdue. I popped to my local Italian Deli to pick up the burrata balls and the fresh baguette... I can’t say I finished this myself, may have had some help and saved some for tomorrow. This serves 4-6 as an appetizer generously! Enjoy
