Chocolate peanut butter cake balls with sweet coconut!

I don’t know about you, but this lead up to Easter has me consuming even more chocolate than I normally do (and I eat a lot of chocolate). There’s this cake that my family always get for birthdays in the US but it’s not sold here, so I’ve been on a quest to find a moist and delicious chocolate cake that can fit the bill here and I found it from Rinkoff Bakery on Farmdrop!! With this cake, I put together some quick & easy cake balls that you can make and they are so yummy, and go like hot-cakes! Perfect for some backyard mingling just in time for Easter or picnics in the park with friends.

Ingredients:
1 chocolate cake / loaf (approx. 550g)
200g cream cheese
2 tbsp icing sugar
1 heaped tbsp peanut butter (I used Manilife)
½ cup desiccated coconut (shredded, dried coconut)
2-3 milk chocolate bars (or white chocolate)

Start by crumbling your whole cake into a large bowl. Then add in the cream cheese, icing sugar and peanut butter. Mix together with your hands (it will be sticky) and then form into balls - so simple, right! Pop some cake pop sticks in them if you like, otherwise just place them all on a plate and into the fridge. While they cool in the fridge, break up your chocolate bars and melt your chocolate on the stove or in the microwave. If doing it on the stove on a low heat, let it melt partially and then remove from heat and continue to stir until all the chocolate has melted. When it’s ready, place into a mug (so it’s deep) and fill another cup with the desiccated coconut. Dunk each cake ball into the chocolate, then into the coconut and place on a plate. When all are done. Pop in the fridge again to cool the chocolate. Once cooled, serve right away or keep them in the fridge and grab when you like!
