It ain’t easy being cheesy brie potatoes with sautéed rosemary red onions 🥔 couldn’t help myself here!

After a couple of bites myself, Josh left me in the dust as he polished off this entire skillet. Safe to say, it’s a winner and easy cheesy pleaser!

Ingredients:
2 medium sized red potatoes, boiled
1 brie triangle (or a round whole one)
2 tbsp dried rosemary
1 medium red onion, sliced
1 drizzle of olive oil
+ 2 hefty pinches of salt

Preheat your oven to 150c fan. While you boil your potatoes in water and one of the hefty pinches of salt, in your cast iron skillet, cook your onions with 1.5tbsp dried rosemary and 1 of the hefty pinches of salt (cook on low for about 25mins) and they should be almost caramelised. If your potatoes are done sooner that the onions, just take them out of the water and put them on the chopping board until the onions are sticky. Slice your brie into about just under 1cm strips, and do the same with your potato. When the onions are ready, pop them in a bowl. Then layer your potatoes and brie into the same skillet in a swirl shape, alternating as much as you can. It’s about every other potato with brie. Then pour your onions on top and place the skillet in the oven for about 5 mins until your brie is melted! Then serve up and enjoy ♥️
