You guys, it’s official. I am in love with tray bakes. I think we knew this was coming for a while now, but I’ve only just gotten the courage to make it official so let’s do it with a close up. Hopefully you are into this because let’s be real, it’s been a whole lot of one pan wonders lately. This one is packed with all the goodies (I’m looking at you mushrooms) and has me crawling back to the oven tray for more...

We got these uneven peppers in our veg box and they looked perfect for roasting. Sweet skin falling away and soft, smooth and supple pepper beneath once cooked... ok I’ll stop drooling, here’s how we did it:

Ingredients:
3 large Roma tomatoes, sliced into 1cm wide pieces
2 large red peppers, sliced into 1cm wide pieces
6 mushrooms, whole
1 yellow onion, sliced
2-3 smashed garlic cloves
2 good glugs (4 tbsp) olive oil
1 tsp garlic powder
1/2 tsp paprika or cayenne pepper
Sprinkle of salt and pepper

Oven preheated to 180C fan, put everything into a ceramic dish (glass or metal work, too) mix so that olive oil and seasoning has coated everything and then pop into the oven for 20 minutes, mixing halfway through. I like my onions browned and my pepper and tomatoes softened, so leave in until desired cook-length, but I take mine out around 20-25 mins. Important to make sure the mushrooms have olive oil or they may dry out, you can rescue them by adding olive oil during the cooking process but if you start them oiled up, they’ll cook better.

We had this for breakfast in wrap form with beans (kidney), grated cheese (cheddar) and some ground turkey (cooked... turkey mince) and then with some grilled chicken later in the day. It’s delicious and add a swig of hot sauce and it’s ready, even eat on the go!! The rosemary was for decor 🙈
