Air fryer parmesan chicken nuggets with blue cheese dip!

All I’ve wanted this weekend is chocolate biscuits, endless cups of tea, miso soup (anyone else addicted?), carbs and fried foods... and these air fryer chicken nuggets are literally the dream. No panko at the ready, you don’t need it for this!

Ingredients for chicken:
2 chicken breasts, cut into nuggets/strips
1 cup crushed cornflakes (or breadcrumbs/panko - I used cornflakes)
2 tsp garlic granules
1 tsp paprika
1 tsp dried parsley
2 tbsp parmesan, grated finely
2 eggs
1 tsp lemon juice
1 dash cream (I used Oatly)
+ frylight sunflower oil cooking spray (you can even pop your “frying” oil in a spray bottle)

For cheese (makes 1 bowl):
150g-250g blue cheese (depends on preference)
250g creme fraiche (I used Oatly)
1 very very very large tbsp mayo
1 handful chives (as much as you like)
1 small clove garlic
🌟How to🌟blend altogether in your blender or chopper (I use my @russellhobbsuk Desire mini chopper and swear it’s the best - not even paid to say that, 100% couldn’t live without it!)

🌟For the chicken🌟Crack your two eggs into a bowl, add your lemon juice & cream. Whisk altogether until combined. In another bowl, mix together your crumbs/cornflakes, garlic granules, paprika, parmesan, parsley until well combined. Dunk each of your uncooked nuggets into the egg mixture and then dredge through the crumbs until fully coated. Repeat for all nuggets. Preheat your air fryer to 190c (aka get it going a little before to heat things up). Spray the inside of the air fryer with oil to get it greased up as we don’t want our nuggets to stick. Then after it’s heated up for a few mins, place about half the nuggets into the fryer for 3 mins on each side, you’ll have to flip them halfway. Repeat for second batch and voila!! Get dunking!!

Super easy and definitely satisfied my cravingsssss! Btw, this dip is super blue cheesy, so go lighter on the blue cheese (or buy a less potent one) if you like it less punchy!
