15 min Mediterranean style wraps

Sometimes I’m craving hummus... sometimes organic @sainsburyshummus is ON SALE, which makes me want it more... .
With all this sunshine and warm weather (breezy tho, amirite?) I’ve been wanting to nom on some simpler, fresher food that can incorporate foods that are in season — like my fav: TOMATOES 🍅♥️

Ingredient:
- 2 chicken breasts cut into strips
- tortilla wraps (I like whole wheat or kale)
- 1 large juicy tomato chopped or cherry toms, chopped in half - GEM lettuce leaves
- ½ cucumber, make sure it’s not soft and cut in slices and then halve again
- black kalamata olives (as many as you like) halved
- organic @sainsburys hummus ✨
- ½ yellow onion (¼ chopped and ¼ sliced)
- garlic powder (teaspoonful)
- salt
- pepper
- olive oil

How to:
1. Cut chicken into strips and toss in garlic powder, light amount of salt and some pepper, to your taste preference. I like to rub my chicken, someone once told me, the more you massage your meat, the more love it will show to you... and although that’s probably more applicable to beef... I massage everything 🙈
2. Add ¼ chopped onion and olive oil to a pan and heat
3. Once heated, add in chicken strips on a medium heat. Check on them every few mins and toss around in the pan to make sure all sides are facedown to and after about 10 minutes or once they are browning, check on one of your larger pieces to see if the inside is fully cooked
4. Unroll your wraps and lay out to be filled
5. Imagine your round wrap was square, if it was, lather the hummus just on the inside of one of the square sides. The reason for this is because when you start to roll, you don’t want everything on the end, you want to have a little room so you can roll the extra outside the square over the filling and fold the sides in and continue to roll (like a burrito... maybe I’ll do a video on this at some point because I’ve practiced ha 🤪)
6. Layer chicken, onion, sliced and cucumber and kalamata olives and add gem lettuce (it meee)
7. ROLL, remember to tuck in the sides
